Happy 4th of July!

I’m bumping last year’s  post, enjoy!  The 4th of July in Baltimore is always special with rooftop deck parties and fireworks over the harbor.   This spectacular cake was perfect for our star-spangled celebration.  Read more for this 4th of July  cake recipe and a fireworks video!





We love having friends over to watch the fireworks for the 4th of July.   Part of the fun for me is creating a fun 4th menu.   When I saw Elissa’s4th of July cake creation on her 17 and Baking blog, I knew I had to try it.   I’m so glad I did.   Friends were delightfully surprised to find the stars & stripes inside layers of cream cheese frosting!

Elissa’s recipe can be found here.    I used her recipe for cream cheese frosting, but found the ‘Perfect Party Cake’  recipe and cake assembly directions here at the delectable deliciousness blog to be more helpful.   The ‘Perfect Party Cake’ recipe is a keeper.  It has a heavenly subtle lemon flavor.   One important thing to note, I tried using regular food coloring, but the red was really a bright, deep pink.   Thankfully I had some red Wilton gel coloring handy that brought the batter to a vibrant red color.  I suggest using the Wilton gel coloring (it comes in little tubs) to ensure rich colors.  To decorate, seasonal blueberries and strawberry spinach berries were arranged on top in concentric circles.
